This recipe came from one of my Grandma's cookbooks, and could not be simpler!
Ingredients:
4 boneless chicken breasts
2 packets of dry french onion soup
1 can of apricot nectar
Directions:
Roll chicken breasts in dry soup mix. Place in a baking dish and pour the apricot nectar over the chicken. You can sprinkle any extra soup mix on top, and add bread crumbs for an extra crunch if you like. Bake at 375 degrees for 45 minutes or so, and enjoy a tangy hunk o' meat! I like to serve it with brown rice and some steamed veggies (both are staples at my house). Whatever floats your boat.

ReplyDeleteOk, so I tried this last night and it was to die for! (I'm trying the tilapia tomorrow night cause I have to buy the fish...) Everyone loved it and I was surprised how the flavors of the preserves and the french onion soup worked so well together. It was so yummy!
ReplyDeleteToday for lunch I used up the leftovers by taking tortillas, spreading garden vegetable (low fat) cream cheese in them, then putting in some veggies and lettuce and the chicken and topping them with a little more of the preserves. It was fabulous!!!!
